Whole Wheat Pancakes


I have been making pancakes for about 7 years now. I'm glad my husband likes them so much because they are so easy to make. I used to make them from Bisquick when I worked full time and then moved on to the real deal. Shawn likes to have a pancake and slice of bacon in the morning so every couple of weeks I fry a package of Oscar Meyer Turkey Bacon (this is the only turkey bacon that we actually like) and a big batch of pancakes. Then I put the bacon in a plastic bag and wrap the pancakes in seran wrap and stick both of them in the freezer. The bacon stays crispy in the freezer and both of them only take a few seconds in the microwave to heat up in the morning. You should try this.

Anyway, as I'm sure most of you know, white flour and white sugar are both horribly bad for our bodies. I'm not a scientist but because these ingredients are processed and refined they are much harder for our bodies to digest and actually are the root of A LOT of America's health problems. But Tanda they taste so much better! Well, they did to me to until about a year ago when we started buying only 100% whole wheat bread, buns, bagels, etc....and now I think white bread is nasty. (Always look to make sure the first ingredient is whole grain wheat on the package). It is all what you train your body to like. So, I've been meaning to try a whole wheat pancake recipe and just got around to doing it. I'm glad I did because the herd loved them! I made pancakes, bacon and eggs for dinner on Monday night and every pancake was gone by Tuesday morning. Shawn told me to never make the other pancakes again. So try this recipe.

P.S. We only use Log Cabin Sugar Free Syrup. It may be a little more runny than the stuff with tons of artery-clogging sugar but we have used it for so long that we no longer like the thick stuff.

*Double this recipe if you want to make extra to freeze.

1 3/4 cups whole wheat flour
2 TBS packed brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt 1 egg slightly beaten
1 1/2 cups 2% milk
1 TBS vanilla
3 TBS cooking oil
Fruit is optional

Mix dry ingredients together and then add egg and liquid ingredients. Pour 1/4 cup onto hot, lightly greased griddle and flip when you see bubbles. Enjoy!

Next time I Kill a Fly


I will be thinking about how cool they actually could be if they weren't so dang annoying! This thought will of course come right before I kill the fly and then have a slight rush of excitement for doing so in one smack. We enjoy having fly killing contests in our house. Is that strange? (Don't answer that).

So I was practicing with the macro settings yesterday on my camera and the Lord sent this little guy to sit on a leaf right next to me. He stayed there for about 10 minutes while I snapped away.

Name this Bug


Here are my two little bug catchers. It is almost virtually impossible to get a good picture of these two so this is the best I could do. We love catching bugs, turtles, ants, snails, crawdads (have no idea if this is a word but that is the way I say it craw-dads), fish, frogs whatever we can find around. And last week a peculiar little creature zoomed past my ear and landed on the driveway. I thought he flew past my ear but after later inspection he does not have wings so he must have jumped 5 feet and 9 inches into the air. But after you take a look at this guy that will not seem an impossible feet. So, if I had a prize or something of value I would give it to anyone who can name this bug. But I don't so if you just feel like satisfying the Maguire family's curiosity you could just tell us. If you are looking for something fun to do with your kids go catch some stuff. They love it!
