I have been making pancakes for about 7 years now. I'm glad my husband likes them so much because they are so easy to make. I used to make them from Bisquick when I worked full time and then moved on to the real deal. Shawn likes to have a pancake and slice of bacon in the morning so every couple of weeks I fry a package of Oscar Meyer Turkey Bacon (this is the only turkey bacon that we actually like) and a big batch of pancakes. Then I put the bacon in a plastic bag and wrap the pancakes in seran wrap and stick both of them in the freezer. The bacon stays crispy in the freezer and both of them only take a few seconds in the microwave to heat up in the morning. You should try this.
Anyway, as I'm sure most of you know, white flour and white sugar are both horribly bad for our bodies. I'm not a scientist but because these ingredients are processed and refined they are much harder for our bodies to digest and actually are the root of A LOT of America's health problems. But Tanda they taste so much better! Well, they did to me to until about a year ago when we started buying only 100% whole wheat bread, buns, bagels, etc....and now I think white bread is nasty. (Always look to make sure the first ingredient is whole grain wheat on the package). It is all what you train your body to like. So, I've been meaning to try a whole wheat pancake recipe and just got around to doing it. I'm glad I did because the herd loved them! I made pancakes, bacon and eggs for dinner on Monday night and every pancake was gone by Tuesday morning. Shawn told me to never make the other pancakes again. So try this recipe.
P.S. We only use Log Cabin Sugar Free Syrup. It may be a little more runny than the stuff with tons of artery-clogging sugar but we have used it for so long that we no longer like the thick stuff.
*Double this recipe if you want to make extra to freeze.
1 3/4 cups whole wheat flour
2 TBS packed brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt 1 egg slightly beaten
1 1/2 cups 2% milk
1 TBS vanilla
3 TBS cooking oil
Fruit is optional
Mix dry ingredients together and then add egg and liquid ingredients. Pour 1/4 cup onto hot, lightly greased griddle and flip when you see bubbles. Enjoy!
